1/8 cup Chopped organic pecans
1/8 cup Craisins Cranberries
1/8 cup Unsweetened coconut flakes
2/3 cup Unsweetened organic soy milk
3 tablespoon Organic white chia seeds
1 tablespoon Pure organic maple syrup (or quantity to preferred taste)
1 teaspoon Pure vanilla extract (or to preferred taste)
Stir together all ingredients except the chia seeds. (You may also mulch, chop or blend for desired consistency).
Mix in chia seeds and stir and refrigerate.
Serve when firm (or desired consistency).
This pudding tastes wonderful if made before bed and served for breakfast!
