Chia Peach Pudding


1 cup unsweetened canned peaches (or may use 1 large ripe fresh peach)  

1 cup Unsweetened organic soy milk   
1 tablespoon pure maple syrup   
3 tbsp Chia Seeds (I used the organic white seeds) 
1 teaspoon 100% Pure Vanilla Extract   


Smash peaches with a fork and then stir in remaining ingredients. 
Refrigerate until set. Serve when firm (or desired consistency).  

That's it!  It really is that simple.  This makes a wonderful breakfast, snack or pre/post run pick-me-up.  You can adjust the ingredients to meet your immediate needs.  I would add more maple syrup pre-run or race.
